Margaery Tyrell’s Ideal Meal

Highgarden strikes me as a likely one of the best regions in Westeros in which to dine.

Seriously.

So when Margaery won the last round of voting for character themed meals, I was more than a little excited. You all were apparently inspired as well, since you had some really fantastic suggestions for this spread. As always, I took some of my favorites and worked them into the finished meal.

I took Josh’s idea of a consomme (a delicate mound of finely diced apple, carrot, leek, and mushroom in the centre of a large bowl, surrounded by fresh edible flowers), but opted for a nice spring lamb, rather than boar. The steaming broth for the soup was served separately, and made the flowers float when it was poured over. The broth, which was clarified with whipped egg whites, was dark and richly flavorful. Plus, as a bonus, the meat that went into making the broth was easily turned into a nice lamb pie.

As sides, in addition to a number of nibbles ideally suited to Margaery and her handmaidens, I served a small salad of summer greens, with fresh fruits and flowers, similar to Sansa’s Salad. I added a cheese plate for the Queen of Thorns, since we know how much she hates being made to wait for her cheese. I also made up a compound butter with parsley and turmeric, so it was the colors of House Tyrell, but I ran out of time to make the bread! Doh! And for a drink, I went with Te Kaihu’s idea of hibiscus flowers in a sparkling wine.

For dessert, we have Jennifer’s suggestion of an Apple Rose Pie, miniaturized, alongside Tanya’s suggestion of sorbet, but instead of orange and rosewater, I chose a peach sorbet in honor of Renly. I would LOVE to make up MellowEnglishGal’s suggestion of a croquembouche, but that’s too much work on top of all the rest of this spread. Soon, hopefully; it’s been on my bucket list for years!

The finished menu:

  • lamb consomme
  • summer greens salad
  • mini apple rose pies
  • cheese plate for the Queen of Thorns
  • nibbles- almonds, fruits, etc.
  • peach sorbets
  • compound butter with parsley and turmeric
  • hibiscus flowers in sparkling elderflower

So there you have it! This might be my favorite character meal yet, or at least tied for first. It’s simple but interesting, light but satisfying. It’s very much the kind of meal I prefer to enjoy in the heat of summer, so it was perfect as an outdoor picnic of sorts, just as soon as I had the photos I needed. ;)

  • Erica: steamed whitefish with simple veg and white wine vinaigrette
  • MellowEnglishGal’s idea of a croquembouche: filled with different pastry creams, decorated with edible flowers, sugared, honey-roasted or gilded almonds, spun-sugar, fresh strawberries/raspberries. It’s fiddly, rich, delicate and temperamental, ornamental but concealing a lot of complexity, absolutely stunning: Margaery

Character Themed Meals: Margaery Tyrell

When I polled our Facebook followers a few months back about which character they would most like to have a character themed meal for, the winner was resoundingly our lovely young queen Margaery.

This should be a delightfully tasty meal to create. The weather is warm, fruits are ripening on tree and vine, and there is an abundance of flowers everywhere. It’s a perfect time for some Highgarden fare, instead of the heavy stews from Castle Black that get me through the winter!

Because Highgarden is so rich in edible goods, and the Tyrells wealthy enough to purchase what they cannot grow, we pretty much have our pick of ingredients. I’m thinking the dishes should be lighter fare, not quite as informal as tapas, but not far off, either. Something including floral notes is a must, whether roses or something else. My elderflowers are just coming into bloom, so I think perhaps those will go into a drink.

Grains and fresh fruits are always good. After all, the Tyrells brought wagonloads of bread to distribute amongst the poor of King’s Landing to bolster support for Margaery, so we can guess that a variety of grains are grown in the Reach. Overall, I suspect the meal should be flavorful, interesting, fresh, and healthy.

So, what do you all think? Have any regional favorites that you think are just begging to be included in a Highgarden meal? As always, I’ll pick out my favorite suggestions and incorporate them into the finished meal, so points for creativity. ;)

A Man must eat… Jaqen H’gar’s Ideal Meal

…and in this case, that man is Jaqen H’gar. It has to be close to three years ago now that you all threw out some wonderful suggestions for this meal, and inspired by a recent episode of the show, I have finally taken full advantage of them. I fear I have not quite done your excellent ideas justice, but a girl has to finish the post eventually, one way or the other. A man, however, eats what he must, and it’s important to keep in mind that Jaqen H’gar is a man who has to be ready to move at a moment’s notice.  

The prevailing thoughts about this meal included Venetian-inspired spicy seafood from Braavos, as well as smaller, easily transported foods, some of which could be foraged. I also loved the idea of incorporating some food trickery, and after looking into it just a bit, discovered that it was a medieval practice. There were historical recipes for making meat look spoiled, presumably to keep unwelcome guests from over-taxing one’s food stores. This would probably fall under a subcategory of Subtleties, or showpiece dishes (more on those later). In this case, the duplicity of such a dish would fit well with a faceless man’s meal. 

So in the end, I used a lot of your ideas to create a two-sided meal. For the man-on-the-go half, I took Juli’s idea of foraged quail eggs and paired it with some fruits, roots, and meats. A man would eat whatever he could come by in the wilderness, and might not be able to risk a fire for fear of discovery. A man might eat eggs raw, but I boiled mine.

For the more cultured Braavosi half of the meal, I agreed with Marianna about the Venetian connection, and went with a spicy squid ink pasta and scallops with a dash of caviar. Notice that black and white color palette of the main course? Yes, it was intentional.

My relatively simple meal included:

  • scallops on a bed of purple cabbage and fennel, served on endives (very pretty!)
  • squid ink pasta with spicy cream sauce and mixed seafood
  • quail eggs, fruits, nuts, cured meats
  • mock-Sahlep, a thick spiced drink sold on the streets (recipe)

 One thing I really wish I could have incorporated is a deceptive sort of food, to represent the faceless man’s changeable nature and capacity for deception. Instead, I hope to do an entire post that looks at medieval subtleties. Let me tell you, there were some amazing ones back in the day!

I also loved the idea of doing those black/white half moon cookies, although they definitely wouldn’t be eaten in that fictional setting. I might still have to do that, although I’d make them rectangular, to better imitate the doors on the House of Black and White. 

 So that’s it! What would Jaqen H'gar eat?

Alright you online Westerosians. You picked Jaqen as the winner in our last character themed meal vote, so now it’s time to brainstorm what elements would make up his ideal meal. 

We know that he is Braavosi (or is he?!), and is a faceless man, and is very changeable, although lives by a certain code. Braavos is considerably more of a melting pot than even King’s Landing, so a rather wide array of possibilities are open to us. Perhaps a few dishes that reflect his dual nature, that look sweet but taste savory? 

So there’s a start. Let us know what you think:

I’ve finished the last character themed meal, which means, of course, that it’s time to start thinking about the next one.

I was going to wait a while longer to post this, but it’s the middle of a week that’s crawling along, and here in Boston it’s grey and rainy. Also, I’m still sad there are no more episodes to watch on Sundays!

Clearly, the only thing for it is a GoT food pick-me-up, in the form of a rabid vote-off to determine our next character themed meal.

The theme of this vote is Movers and Pushers, and the contestants are some of the more subtle, secretive, sly and manipulative secondary characters in the books and show. The voting ends at 12:30 pm on the 20th, so you’ve got a week to make sure your character wins.

The Red Viper's Ideal Meal

This post is mostly for those who have read the books. For those just watching the show, you’re in for a treat; Oberyn Martell is hella cool. :)

First of all, I have to offer up an apology. You all absolutely outdid yourselves with the suggestions for this meal, and I have in no way done credit to the fabulous and accurate ideas for this meal. It was awesome to read suggestions from North Africa, Spain, and a number of other regionally appropriate places. However, due to time and budget constraints, I had to dramatically downsize the meal I had originally planned to try and make. I hope to try several of your wonderful suggestions later, though!

 As a stickler for drawing inspiration from the books, I liked all of Ana’s suggestions, but in particular the olives in garlic-paprika sauce, and the blood oranges with mint. I agree with Pitzur, in that the Red Viper is a gourmand, and that his ideal meal would be as rich, sensual, and exotic as his other tastes, and similarly unconstrained. However, I wanted to acknowledge FluffyWarthog’s observation that the Red Viper is a well-traveled cavalryman, and give a nod to that side of his life as well.

The finished meal tried to fairly represent both sides of his experience and personality. A few suggestions stood out as must-haves, simply because so many of you suggested them. Notably: olives, stuffed peppers, chickpeas, etc. I liked the idea of a tajine, or another similarly cooked meat dish, but because Dorne is so hot, I imagine that cooking over an open fire would be avoided, when possible. However, pit cooking, as suggested by Devaki, would have been the ideal way to cook the snake, which responds best to slow cooking. Whoops.

 The final menu looks like this:

  • Martell sigil- skewer of Roasted snake, with roasted red peppers, orange slices, etc., over a chickpea tortilla
  • peppers stuffed with almond paste, pine nuts, and spinach (recipe)
  • blood orange ice, with ginger-mint agave/aloe syrup
  • fruits: blood orange, plums, kumquats, melon
  • campaign foods- dates, dried figs, jerky, cured meat, olives, almonds, pine nuts, chickpeas, sunflower seeds, cheese

 

   I didn't mean for it to have a stache...

Thoughts:

For the snake, I opted for something different and purchased a python fillet, rather than the already tried rattlesnake. I used the same spicy snake sauce as for the cookbook snake dish, but python, it turns out, needs to be slow cooked, or braised, rather than roasted or grilled. As a result, the snake was tough, albeit flavorful. This is where that slow pit cooking would have been ideal. Lesson learned.

The other elements of the meal were delicious and wonderful, though. The stuffed peppers were awesome, and the recipe for them will be going up on my personal blog in the near future. My second favorite was the mint/agave ice. Cold and refreshing, it would be just the thing to purge the dust from one’s throat.

The assorted fruits and snacks are well suited to a man with a wide variety of tastes. The foods for campaigning would satisfy hunger on the road, as well as the tedium of travel. The spiced olives, as expected, were delicious, their saltiness countered by the sweetness of the dried fruit. Feta and jerky are unbelievably good together, and the chickpea tortillas (socca) might become a staple in the Inn.

Were it Dornish sunny, and I feeling more creative, I might wonder at the sides being equated to his paramours, the mothers of the Sand Snakes. I think that could be a really fun way to represent the Red Viper in food form (suggestions welcome!).

For drinks, I imagine he would enjoy a sweet and fruity Dornish summerwine. For non alcoholic, it has to be lemonsweet.

Incidentally, if anyone would like to send me off on a horsey excursion to test this menu, strictly for research purposes, I would be more than happy to make that sacrifice. Just saying.

Honorable Mention:

  • Robyn- almond snake with pastry
  • everything from Nightsky, but especially the Pissaladiere: free-form caramelized onion tart accented with latticed anchovies (I’m SO making this soon!)
  • FluffyWarthog- dishes that look like the Martell sigil-For fresh meats, any kind of kebab or souvlaki would be perfect, and presenting a spear of golden, honey-glazed meat on top of a round pita (maybe with some artfully-laid-out pimento slices in a sun pattern, or sprinkled with paprika and cayenee) would reinforce the Martell sigil imagery. To get the same effect with the dessert, some lemon or orange slices, overlaid with toothpicks speared with dates could work well.
  • Viper venom, either in soup or infused into meat, as per Nic and
  • RandOm- Maybe some shakshouka – eggs poached in a spicy chili and onion sauce?
  • ForTheMarshal – Mavrodafni wine
  • Devaki Khanna- Rajasthani green chilli fritters, with chickpea batter; also, the concept of desert cooking in large pits
  • Irian- blood orange filets, macerated for 24 hours in orange juice, sugar and lemon zest

 

Character Themed Meals – The Red Viper

“[Oberyn Martell] forked a stallion black as sin with a mane and tail the color of fire. He sat his saddle as if he’d been born there, tall, slim, graceful. A cloak of pale red silk fluttered from his shoulders, and his shirt was armored with overlapping rows of copper disks that glittered like a thousand bright new pennies as he rode. His high gilded helm displayed a copper sun on its brow, and the round shield slung behind him bore the sun-and-spear of House Martell on its polished metal surface.” -A Storm of Swords

No, he's not cast yet, but we like him...

 Here’s your runner up from our last poll, having lost to The Hound by just 1% of the votes.

Oberyn Martell is mad, bad, and dangerous to know. He’s got a fiery temper, illegitimate Sand Snake daughters scattered throughout Dorne, and a winning smile. He’s a lover, but he’s also a fighter, so don’t get any ideas.

Because he’s Dornish, there probably has to be snake in there somewhere, and certainly a lot of fiery peppers.

The Hound’s Ideal Meal

Unlike our previous character themed meals, there was a lot of consensus about the Hound’s ideal meal: Nothing fancy, a cheap cut of meat, bitter drinks, and possibly a lemoncake or two for dessert.  Kathleen summed it up well, stating that the meal “should be charbroiled, unpretentious, and drowned in a sea of wine”.

We liked where a lot of you went with game meat, what with Sandor being a “hound”. The subtle poetry of hound and quarry was too appealing to resist. So, game meat it was, and we chose venison and rabbit. True, in our Middle Ages, only the nobility could hunt, but are you about to stand between the Hound and his meal? Didn’t think so.

Our grill was recently stolen, right off our porch. Otherwise we’d do a spit roasted rabbit to go with the meal. Barring that, though, we swapped in some oven roasted rabbit legs alongside the venison sausages.

A big question was whether to sear the meat, or no. Personally, we liked the idea, but could see how the Hound might not. So, we hedged our bets, searing the lamb, then hiding the evidence by braising. :) We also liked the idea of lamb, because while Sandor might be a Hound, he’s also more than a bit wolfish. Lamb shank it was, then.

Both Kate Quinn and Irian suggested bone marrow, which we loved. It evokes the image of a big mastiff gnawing on a bone in front of the fire, and also ties in with Random’s thought that “Joffrey would probably find it amusing to throw his dog a bone.” Ours is topped with applewood smoked salt.

For smaller sides, we liked Frank’s suggestion of beans thick  with molasses, and Duckchick’s of sharp cheese with apples, for the Hound’s sharp words.

Our final bill of fare: black bread, bone marrow, leg of lamb, venison sausages, rabbit legs, savory beans and sharp cheese, wilted greens, and rustic lemoncakes.

 Our Thoughts:

Good Lord. Or the Seven. Or any other deity the Hound probably doesn’t believe in…

This is a fantastic meal.

It is obviously very heavy on the meat, but given the fighter’s lifestyle that the Hound leads, this makes sense. The three meats- lamb, venison, and rabbit- all give amazingly rich flavors to the meal. Of course, it helps that we braised the lamb and then the rabbit in mead and molasses. The venison sausage already has port in it, so each of the meats has essentially been cooked in/with booze. Even the vegetables have been braised in mead, along with the lamb, so they’re incredibly tender and tasty. And the bread! Also made with beer.

The rustic lemoncakes are a much lighter finish to a very heavy meal, and you’ll probably only have room for a couple of them.

Our drinks consultant recommends a beer made with juniper to pair with the meat dishes, in the style of a traditional Finnish Sahti.  A couple good examples of this are Huvila Arctic Circle Ale and Lammin Kataja.  Another interesting pairing would be a rauchbier, such as Spezial and Schlenkerla, given that the smokiness would pair particularly well with the molasses beans and cheddar.

Honorable Mention:

  • Chris’s suggestion of black and white truffles to represent the duality of his nature (only if you’re buying!)
  • Wildling, Selkie, and Julia’s suggestions of “little birds”. We’ve got something else planned for those, though… ;)
  • Irian’s list of other cheap meats, including like black pudding, head cheese, ox tongue, lard, goose fat and bacon
  • Richard’s suggestion of “Black Dog” wines, especially if served on a yellow tablecloth
  • roussefolle’s wonderful ideas, just exotic enough to be Westeros, amazingly delicious
  • Verity’s suggestion of Baked Alaska for dessert, first for the irony of a flambe, and also because they can be made to look like a mountain, and the Hound would enjoy symbolically demolishing and devouring a Mountain

 

Character Themed Meals – Sandor Clegane

“The left side of his face was a ruin. His ear had been burned away; there was nothing left but a hole. His eye was still good, but all around it was a twisted mass of scar, slick black flesh hard as leather, pocked with craters and fissured by deep cracks that gleamed red and wet when he moved. Down by his jaw, you could see a hint of bone where the flesh had been seared away.”

The winner of our most recent poll, with 30% of the vote, just barely beat out The Red Viper, who jockeyed for the lead with 29%. It was neck and neck the whole way, but finally The Hound prevailed, leaving his competition in the dust.

So here you go. You chose him, so what would you most like to see for a Hound themed meal? Extra points for creativity and prose, extra demerits for anyone suggesting we cook three kinds of dog.
